2 lbs Flank Steak or Skirt Steak
Corn Tortillas and Flour Tortilla
Queso Fresco or Panela, or any other crumbing Mexican cheese
Pico de Gallo or Salsa
Slices of Lime
Ingredients for the Steak Marinade
1 cup chopped fresh cilantro stems and leaves,
1/2 cup grapeseed oil, avocado, or another high heat oil
2 freshly squeezed limes
1 freshly squeezed orange
2 tablespoons of white vinegar
2 tablespoons of tequila (optional).
1 serrano or jalapeno, seeded and minced (use 1/2 to reduce heat).
1 teaspoon cumin
1 teaspoon salt
1/2 teaspoon black pepper
1 – Mix all ingredients in a blender or food processor. Blend all ingredients until smooth.
2. Place the steak in an oven-safe glass or baking dish. Pour the marinade on top. Marinate the steak for between 2-8 hours or overnight.
3– To get the best results, heat an outdoor grill. You can also use an oven broiler and a cast-iron skillet. Season steaks with salt and pepper. Cook for approximately 4-6 minutes on each side.
4 – Who should remove the steak from the grill at a temperature that is slightly below your desired temperature. The steak will continue cooking while it rests. Let it rest for a few minutes, covering loosely with aluminum foil. When the steak is ready, cut it into thin slices about 1/8-1/4 inches thick.
5 While the steak is cooking, heat the tortillas in a skillet or on a grill for 30 seconds on each side. To keep warm, stack the tortillas on a plate and cover with foil or foil.
6 To make tacos, add pieces of steak, chopped onion, cilantro, pico Verde, cheese, and pico de gallo to each tortilla. Then, add a squeeze of fresh lemon juice and your favorite hot sauce.
7– Buen Provecho! (Enjoy!)
